P3 Energy Bar

I was originally gifted this recipe from a friend in Northern California. Over the years, I've tweaked it to the ratios that work for me and my family, but play with it and fine-tune it to your liking! This bar can be used for a pre-workout snack, breakfast, in-between meals; really any time of the day.

Ingredients:

  • 3 cups whole rolled oats (sub Gluten Free, if desired)

  • 1/4 cup ground flaxseed

  • 1/4 cup shredded coconut

  • 1/2 cup dried cranberries - I've used dried blueberries, too

  • 1/2 cup mini chocolate chips

  • 1 scant cup of honey

  • 1 cup almond butter

Instructions:

  • In a large bowl, mix together the oats, ground flaxseed, shredded coconut, dried cranberries, and mini chocolate chips

  • In a separate bowl, mix together the honey and almond butter

  • Pour the honey and almond butter over the oat mixture and blend with a large spoon or spatula

  • Spoon into a 9 x 13 glass dish (preferably with a lid for storing) taking care to press the mixture down until evenly distributed

  • Put into the freezer for 30 minutes to set

  • Then store in the refrigerator; cut and enjoy as needed throughout the week
